Pepper Saute’d Salmon

Salmon Ingredients:
- Olive Oil
- 4 skinned salmon fillets
- 1/2 teaspoon Kosher salt
- 1/4 Teaspoon Black Pepper
Saute’ Ingredients:
- Olive Oil
- Finely sliced small onion
- 1 7 ounce Bottle Roasted Red Peppers – Chopped
- 1 Clove minced Garlic
- 1/4 Cup dry white wine
- Pinch Kosher salt
- 4 Thinly sliced Basil leaves
Salmon Directions:
- Heat 2 Tablespoons olive oil in a nonstick skillet.
- Wrap handle with foil, transfer to 450 degree preheated oven, warm for 5 minutes.
- Add salmon and sprinkle with half of the salt and pepper. Bake for 5 minutes.
- Flip salmon and sprinkle the rest of the salt and pepper. Bake additional 5 minutes.
Saute Directions:
- Heat 1 teaspoon olive oil in medium saucepan over medium low heat.
- Add onion and cook for 3 minutes.
- Add Bell Pepper cook for 5 minutes.
- Add Garlic and cook for 1 minute.
- Add wine and cook for additional 5 minutes.
- Sprinkle with salt.
- Put Saute’ on plate and top with salmon.
- Garnish with basil
