Ingredients:

  • 2 Chicken breasts grilled and cut into bite size portions1 Pound of Penne Pasta2 Cups Extra Virgin Olive Oil1 Tablespoon Minced Garlic1/2 Head of Broccoli cut into small florets1 Small Summer Squash Sliced1 Cup Fresh Mushrooms1 Red Pepper6-8 Stalks AsparagusFresh Basil or 2 Tablespoons Dried Basic2 Teaspoons Dried Oregano1/2 Teaspoon Red Pepper Flakes1/4 Teaspoon Kosher Salt to taste1/4 Teaspoon Black Pepper to taste1/2 Cup Parmesan Cheese
  • Directions:
  • In a pot, add the oil, garlic, pepper flakes, and red pepper and cook until peppers begin to softenCook pasta according to directions on the packageAdd mushrooms, broccoli, squash, asparagus, oregano, basil, salt, and pepper and allow to simmerAdd chicken and parmesan cheese with about 2 minutes cook time left for the pasta and mix inDrain PastaPour oil combination over pasta, serve and enjoy!
